vintage:
Normal sprouting; Cold and rainy spring; Summer with warm but not
extreme temperatures. Hot harvest carried out on September 13, 2019.
Vinification: Clusters
selected by hand in the vineyards. Quickly transported to the winery in 15 kg crates. Foot-trodden with 100%
whole-clusters in open 600 liter French oak barrels . Alcoholic fermentation
and part of the malolactic with the skins for
20 days with the subsequent pressing. Malolatic fermentation in used French oak barrels (2008) of 500L.
(Boutes) without the use of
any additional product. Aging on its lees for 9 months until bottling. Bottling
without clarification, filtered and with
modest levels of SO2.
Bottled: june 17, 2020 (fruit day and waning moon).
Production: 657 bottles + 1 magnum. |
