old vines. Organic farming.
Exposure: facing to the south.
Soil: granite, on slopes looking
towards the river.
2015
vintage: Warm spring; hot, dry
summer; early maturing. Harvest was held on 6 and 7 September.
Vinification: Clusters
selected by hand in the vineyards. Quickly transported to the winery in
15 kg crates. Foot-trodden; 100% Whole Cluster; Fermented in 4.000
liters chestnut foudre with long maceration; Raised 12 months in used
500 liter French oak. No stabilization or clarification.
Bottled: Janury 25, 2017 (fruit day).
Production: 2.255 bottels and 4 magnums.
