2017
vintage: Winter
was warm-rainy, early brudbreak; Continuous
warm-rainy spring, early flowering; Dry summer but without extreme Tº optimal
for a premature maturation and optimum quality; Harvest begins August 21, 2018
Vinification: Clusters
selected by hand in the vineyards. Quickly transported to the winery in 15 kg crates. Foot-trodden with 100%
whole-clusters in open old chestnut barrel
+-80 years . Alcoholic fermentation and part of the malolactic with the skins for
15 days with the subsequent pressing. Malolatic fermentation in used French oak barrels of 225L,
without the use of any additional product, except SO2. Aging on its lees for 11
months until bottling. Bottling without clarification,without filtered and
with modest levels of SO2.
Bottled: August 7, 2018 (waning moon). Aging in bottle for 8
months.
Production: 684 bottles. |
